Sinugbang Bangus

Sinugba is the Visayan word for inihaw, grilled, barbeque, kebab. Sinugbang Bangus literally means grilled milkfish (deboned) stuffed with tomato, onion and lemon grass (tanglad).

Sinugbang Bangus Recipe Ingredients:

* 1 whole bangus (deboned)
* salt
* 1 medium size tomato
* green onions
* 1 small tanglad tied in a knot (lemon grass)

Other things to be used:

* banana leaves
* aluminum foil

Note: charcoal grill is a must for this recipe.

Sinugbang Bangus Cooking Instruction:

1). Cut Bangus from the back and clean the inside making sure you do not mess up the stomach lining of the fish (This is the most tasty part) and make sure to take the gills out (This is the smelly part).

2). Chop all ingredients to small size cubes (except the lemon grass)

3). Mix all chopped ingredients including the salt in a bowl. Mix it well.

4). Stuff the bangus with mixture and place the lemon grass in the middle part.

5). Wrap bangus with banana leaves first followed by the foil on top of the leaves.

6). Grill bangus in medium heat until fish outer skin turns golden brown (looks like burned or something).

7). Serve hot with plain or fried rice. Mix some soy sauce, calamansi and siling pula (red chili) to serve as a dip. Enjoy.!

Shrimp Cooked With Bitter Gourd

This is a recipe originally posted at MyKitchenCooking.Com by Lanie G. I decided to re-post it here so we can try her own recipe. It looks good and delicious aside from being healthy (because of ampalaya).

According to Lanie G: "I love this recipe and it's my imagination on how to cook shrimp with ampalaya. It's tasty."

Shrimp With Ampalaya

Without further ado, here is her very own shrimp with ampalaya recipe.

Shrimp Ampalaya Ingredients:

* 4lbs of head on shrimp
* 5 large Ampalaya
* 1 large tomato
* 1 garlic glove
* 1 small size onion
* oil
* soy sauce
* oyster sauce
* salt
* black pepper

Shrimp Ampalaya Preparation - Cooking Instruction:

1). Wash the shrimp and drain, then put aside.

2). Cut the tomato, onion, garlic then put aside in one plate. Wash and cut the ampalaya and remove the seed, then cut in small pieces just like in the photo. Put aside.

3). Use the big pan and just use the small amount of oil enough to fry the ingredients. Slice the onion, tomato and garlic.

4). Once the oil is warm add garlic, let it brown and add onion and stir until the onion is cook, then add the tomato and stir for a few minutes and add shrimp stir it and wait until about 10 minutes.

5). Add the ampalaya. Mix altogether and cover it for about 5 minutes then add estimate the salt, soy sauce, oyster sauce, pepper. Mixed altogether then cover until the shrimp and ampalaya is cook. Then it will be ready for about 1o minutes.

Serve with white rice.

As we all know, Filipino New Year Celebration is all about driving out bad luck or bad spirits and welcoming in good luck for the coming new year. It is a borrowed belief or tradition from our Chinese brothers and sisters. One big example of this borrowed tradition is the preparation of 13 different kinds of round and sweet fruits at the dining table.

Ever wonder why the traditional number of round and sweet fruits being served and prepared during New Year's Eve is 13? If you are a typical Filipino like me, you will think that 13 is so unlucky and is kind of associated with evil spirits or deeds. But, with this kind of Filipino tradition, its not.
