Baked Macaroni And Cheese

Here is a good baked mac and cheese recipe for you. I know, this is not a Filipino (originated) recipe but more and more Filipinos are starting to like and love this dish. One evidence is the instant bake mac and cheese being offered in some Philippine stores and supermarkets.

You may use nearly any pasta-tube, corkscrew, or cupshaped ones work best because they grab the sauce-just be sure to slightly undercook whatever pasta you use since it will continue to cook in the oven.

Vary the type of cheese you use too: try blue cheese, goat cheese, smoked Gouda, or even mascarpone for a decadent version.

This recipe makes 4 to 6 servings. The time consumed in making and baking this dish is about 45 minutes.

Baked Macaroni And Cheese

Baked Macaroni And Cheese Recipe Ingredients:

* Salt
* 2 1/2 cups milk (low-fat is fine)
* 2 bay leaves
* 1 pound elbow, shell, ziti, or other cut pasta
* 4 tablespoons (1/2 stick) butter
* 3 tablespoons all-purpose flour
* 1 1/2 cups grated cheese, like sharp cheddar or Emmental
* 1/2 cup freshly grated Parmesan cheese
* Freshly ground black pepper
* 1/2 cup or more bread crumbs, preferably fresh

Baked Macaroni And Cheese Recipe Baking/Cooking Procedure:

1). Preheat the oven to 400°F. Bring a large pot of water to a boil and salt it.

2). Cook the milk with the bay leaves in a small saucepan over medium-low heat. When small bubbles appear along the sides, about 5 minutes later, turn off the heat and let stand.

3). Cook the pasta to the point where it is almost done but you would still think it needed another minute or two to become tender. Drain it, rinse it quickly to stop the cooking, and put it in a large bowl.

4). In a small saucepan over medium-low heat, melt 3 tablespoons of the butter; when it is foamy, add the flour and cook, stirring, until the mixture browns, about 5 minutes. Remove the bay leaves from the milk and add about 1/4 cup of the milk to the hot flour mixture, stirring with a wire whisk all the while. As soon as the mixture becomes smooth, add a little more milk and continue to do so until all the milk is used up and the mixture is thick and smooth. Add the cheddar and stir.

5). Pour the sauce over the noodles, toss in the Parmesan, and sprinkle with salt and pepper. Use the remaining 1 tablespoon butter to grease a 9 x 13-inch or similar-size baking pan and turn the pasta mixture into it. Top liberally with bread crumbs and bake until bubbling and the crumbs turn brown, about 15 minutes. Serve piping hot.

This homemade pizza rolls makes up to 32 eggrolls.

Homemade Pizza Rolls

Homemade Pizza Rolls Recipe Ingredients:

* 4 cups shredded pizza cheese or mozzarella cheese
* 1 lb sausage, cooked, drained
* 2 (3 ounce) packages sliced pepperoni, chopped
* 1 medium green pepper, finely chopped
* 3/4 cup fresh sliced mushrooms, coarsely chopped
* 1/2 small onion, finely chopped
* 1/3 cup chopped black olives
* 1/2 cup crushed pineapple, very well drained
* 2 (14 ounce) jars pizza sauce
* 32 egg roll wraps
* oil (for frying)

Homemade Pizza Rolls Cooking Directions:

1). Combine above ingredients except wrappers (and oil).

2). Place a ¼ cup filling in center of each egg roll. Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner w/water and roll up tightly to seal. Fry in 1” of 375ยบ oil for 1-2 minutes til golden brown.

3). Serve with addition pizza sauce for dipping if desired. Enjoy!

Speedy Ginataang Sugpo

A good seafood recipe for you. This is a hot and spicy sugpo or shrimp recipe with coconut milk. Those who loves eating seafood and hot and spicy dishes will surely love this delicious and yummy dish.

Speedy Ginataang Sugpo

Speedy Ginataang Sugpo Recipe Ingredients:

* 200 grams prawns
* 15 grams siling pangsigang
* 50 grams Pechay Tagalog
* 1 cup coconut milk
* 1 tablespoon bagoong alamang
* Aji-Ginisa Shrimp Flavor
* 25 grams bell pepper, sliced thinly
* 1/4 pc onion, chopped
* 3 cloves garlic, minced
* 5 grams ginger, sliced thinly
* 1 piece siling labuyo, chopped
* 2 stalks lemongrass, pounded
* Plain rice for serving
* Oil

Speedy Ginataang Sugpo Recipe Cooking Directions:

1). Saute onion, garlic, ginger and prawns in a pan with oil.

2). Add the bagoong alamang .

3). Add coconut milk, bell pepper, long green chili and lemongrass. Season with Aji-Ginisa.

4). Take out lemongrass. Plate and serve hot.

Nilupak

Nilupak is usually made of mashed kamoteng kahoy (yucca root or cassava), although you can also use kamote (sweet potato) or saging na saba (a form of banana used for cooking) with sugar or milk to taste. Nilupak is laden with butter or margarine and normally wrapped in banana leaf for packaging. This is also a popular merienda recipe for Filipinos.

Nilupak Recipe Ingredients:

* 3 kg.kamoteng kahoy or cassava or yucca root, cubed
* 2 cans of condensed milk
* 200 g grated coconut
* 4 tbsp. butter, melted

How To Make Nilupak:

1). Peel and cut cassava into cubes, boil them until they become soft (not soggy).

2). Mash it manually (or you can use blender).

3). After mashing, transfer it in a deep pan.

4). Add milk, grated coconut and butter into mixture.

5). Mixed manually (in low heat), until well blended.

6). Arrange on a platter (or in a banana leaf) and cut into desired shapes. Enjoy!


Laksa Laksa (Bean Noodles with Vegetables)

Laksa Laksa or Bean Noodles with Vegetables is also an all time favorite of mine. This recipe or dish is best partnered with steamed rice and fried fish. This Filipino vegetable recipe is known to be a healthy food and perfect for diet conscious persons.

Laksa Recipe Ingredients:

* 3 tablespoons vegetable or corn oil
* 1 tablespoon finely minced garlic
* 1 cup finely minced onion
* 1/2 cup cubed pork butt
* 1 cup shelled shrimps (use shells for shrimp juice)
* 1 cup diced squash
* 2 cups string beans cut into 1/2-inch pieces
* one 10-ounce package frozen lima beans
* 1 eggplant, diced and peeled
* 2 cups squash leaves or any green leafy vegetable
* 2 cups sotanghon, in water and drained
* 3 tablespoons patis or 1 tablespoon salt
* 1 teaspoon freshly ground pepper
* 1-1/2 cups shrimp juice or canned shrimp bisque

Laksa Recipe Cooking Procedure:

1). In a large skillet, heat oil and saute garlic and onion. Cook until garlic is brown and onion
transparent.

2). Add pork, shrimps and shrimp juice or bisque. Simmer until pork is
cooked.

3). Add string beans and lima beans.

4). Add eggplant, squash and squash leaves.

5). Add sotanghon. Simmer over moderate heat for 8 minutes.

Season with patis or salt and pepper. Serve hot. Enjoy.


Picadillo (Ground Beef and Vegetable Soup)

Picadillo consists mainly of ground beef. Picadillo is mostly seen and served at countries like Cuba, Mexico, and other Latin American countries. Picadillo comes from the Spanish word, “picar” which means “to mince” or “to chop”.

Picadillo here in the Philippines (Filipino Picadillo) is made with beef and either potatoes or chayote (with other vegetables).

Filipino Recipe Picadillo

Picadillo Recipe Ingredients:

* 2 tablespoons oil
* 1 small onion, chopped
* 3/4 kg (1 1/2 lb) minced beef
* 1 1/2 liters ( 6 cups) beef stock or water
* 1 medium potato, peeled and diced
* 1 small carrot, peeled and diced
* 50 g (1 cup) spinach leaves (optional)
* 2 tablespoons patis (fish sauce)
* Salt and pepper to taste

Picadillo Recipe Cooking Procedure:

1). Heat oil in a casserole or large saucepan and saute onion until transparent, 1 to 2 minutes.

2). Add garlic and saute until fragrant.

3). Stir in minced beef and cook until brown.

4). Pour in beef stock or water and bring to the boil then simmer over medium heat.

5). Add diced potatoes and carrots and simmer until potatoes and carrots are tender, about 10 minutes.

6). Stir in spinach leaves if desired and heat through.

Season it with patis, salt and pepper. Enjoy.


Ginataang Hipon (Shrimp in Coconut Milk)

Ginataang Hipon Recipe Ingredients:

2 cups coconut milk
1 cup water
1 cup pepper leaves or any green leafy vegetable in season
2 pounds shrimps, shelled and deveined
salt and freshly ground pepper to taste

Ginataang Hipon Recipe Cooking Procedure:

1). In a medium pot, bring coconut milk and water to a boil.

2). Add shrimps. Season with salt and peper.

3). Add pepper leaves just before turning off heat. Serve hot with steamed rice. Enjoy.

Note: You may also add some vegetables like langka or kalabasa in this Ginataang Hipon or Shrimp cooked in Coconut milk recipe.
