Ground Pork with Quail Eggs

Ground Pork with Quail Eggs or Giniling na may Itlog ng Pugo is one of my all time favorite. Its easy to prepare but the taste of it is almost priceless. Here is how Ground Pork with Quail Eggs is done.

Ground Pork with Quail Eggs Ingredients:

* 1/4 cup of cooking oil
* 4 cloves crushed garlic
* 2 medium red onion, finely minced
* 250 grams red ripe plump tomatoes, finely minced
* 1 medium potato, chopped
* 1 medium carrot, chopped
* 450 grams lean ground pork
* a teaspoon of ground black pepper
* 2 tbsps of fish sauce
* a small piece of green pepper, seeded and finely minced
* a cup of water
* a piece of pork cube
* 1 heapful teaspoon of white sugar
* 2 dozens of hard-boiled quail eggs (shells removed)

Ground Pork with Quail Eggs Cooking Procedure:

1). In a pan, over medium-high heat, Put oil then saute garlic until rich golden brown.

2). Add onion and tomatoes. Cook until very limp.

3). Put potato and carrot. Cook for 5 minutes.

4). Place the ground pork, pepper and fish sauce. Cook for 8-10 minutes. Stirring often to separate the ground pork.

5). Put the green pepper. Saute for another 5 minutes.

6). Add in the water, pork cube and sugar. Mix. Cover. Bring to boil.

7). Reduce fire to low. Simmer for 12 minutes.

8). Add the quail eggs. Stir. Cook until it boils again.

Serve over warm cooked rice or as filling for your white bread. This is good for 4-6 servings.

Here is the Filipino style of Chicken a la King Recipe. Chicken ala king is made with cooked chicken and a thickened sauce. This recipe also mainly consist butter, mushrooms, and other ingredients. Chicken a la king recipe is an easy meal to serve over rice or toast.

Chicken a la King Filipino Recipe

Chicken a la King Recipe Ingredients:

* 3 tablespoons butter
* 1 cup fresh sliced mushrooms
* 1/2 cup chopped green bell pepper
* 1/4 cup all-purpose flour
* 1 teaspoon salt
* 1/8 teaspoon pepper
* 2 cups evaporated milk or half-and-half
* 1 1/2 cups chicken broth
* 3 cups diced cooked chicken
* 1/4 cup chopped pimiento

Chicken a la King Cooking Instructions:

1). Melt butter in a medium saucepan. Add mushrooms and green pepper and cook for 5 minutes.

2). Blend in flour, salt, and pepper.

3). Continuously stir it and cook until smooth and bubbly.

4). Add milk and chicken broth, stirring constantly.

5). Stir and cook for 10 minutes.

6). Blend 2 tablespoons of cornstarch with 1/4 cup cold water for a much thicker sauce; add to sauce, a little at a time, until desired thickness is reached.

7). Add chicken and pimiento; heat through until done.

This Chicken ala King recipe makes 6 to 8 servings. Serve it on toast points or rice.

Chicken Asparagus Soup


Chicken Asparagus Soup Ingredients:

* 5 cups chicken broth
* 3 tablespoons cornstarch
* 2 tablespoons minced cooked ham
* salt and freshly ground pepper to taste
* 1/2 cup water
* one 16-ounce can asparagus spears
* 1 chicken breast, boned and sliced, shredded just before cooking

Chicken Asparagus Soup Cooking Procedure:

1). In a medium pot, combine chicken broth, salt and pepper.

2). Add the liquid from the can of asparagus.

3). Thicken the broth with cornstarch.

4). Slice the asparagus spears into 1-inch lengths and add them to the broth.

5). Add 1/2 cup water. Bring the whole mixture to a boil, then remove from heat.

6). Add the chicken to the broth and bring back to a boil, stirring briskly.

7). Cook until chicken is tender.

Sprinkle your soup with ham bits and serve it while its hot. Enjoy!


Masapan de Buco

Masapan de Buko is a famous Filipino or Philippine dessert. It can be found or can be seen mostly at Filipino parties or occasions. Below is a simple recipe for Mazapan de Buko. The recipe makes 2 dozen servings.

Masapan de Buco Recipe Ingredients:

* 2 cups grated buko
* 1/2 tsp vanilla
* 1 (300 ml) can condensed milk
* 2 tbsps butter
* 4 egg yolks
* Evaporated milk for brushing
* 1 tbsp cornstarch
* glazed fruit

How To Make Masapan de Buko:

1). In saucepan, combine the buko and vanilla; cook over low heat15 minutes or until thick. Stir constantly.

2). Beat the egg yolk along with butter and condensed milk in a bowl and pour in the buko and vanilla mixture.

3). Continue cooking and stirring over low heat until mixture separates from sides of pan.

4). Remove from heat and stir in butter. Pour into muffin pan lined with 1-1/2 inches paper cups.

5). Brush top with evaporated milk and garnish with diced glazed fruit.

6). Bake at 350°F 15 minutes until golden brown.

Rellenong Alimango or Stuffed Crab is a good Filipino dish. Although, the preparation requires a bit of time, the end results will dwarf the time and effort being exerted through the process. Here is an easy to follow recipe of Rellenong Alimango.

Rellenong Alimango (Stuffed Crab)

Rellenong Alimango Ingredients:

* 8 pieces crabs
* 1 small head of garlic (minced)
* 1 small onion (minced)
* 3 pieces tomatoes (diced)
* 3 pieces potato (boiled, peeled & cubed)
* 4 pieces whole eggs
* Pinch of salt & pepper
* 3 tablespoons olive oil
* Cooking oil

Rellenong Alimango Cooking Instructions:

1. Cook crabs and take out all meat and mince.

2. Keep the shells and set aside.

3. In a pan, saute garlic, onion, and tomatoes.

4. Add in potatoes and minced crab meat.

5. Cook and let cool then add one whole egg to the mixture.

6. Stuff the shells with the mixture.

7. In a bowl, whisk 3 whole eggs.

8. Dip stuffed shells in egg and deep fry.

Serve hot. Enjoy.

Pichi-pichi is an authentic Filipino dessert or delicacy. Pichi Pichi is made from coconut and cassava or kamoteng kahoy. This is considered as one of many variants of the famous "puto" of the Filipino people. Pichi pichi originated from the province of Quezon.

Pichi Pichi Ingredients:

* 1 – 1/2 cups grated cassava
* food coloring (optional)
* 1 cup sugar
* 1 bundle of pandan leaves, boiled in 2 cups water until reduced to one cup, and cooled ( or canned pandan concentrate, or a few drops of pandan essence in a cup of warm water)
* 1/2 tsp lye water* “lihiya”
* grated coconut for topping

Pichi Pichi Cooking Instructions:

1). Mix the sugar and the pandan flavored water and mix until sugar is dissolved.

2). Mix in the cassava and then add the lye water drop by drop mixing well as you do so.

3). Pour into a mold or bowl that fits your bamboo steamer.

4). Steam until the mixture becomes translucent.

5). While still hot scoop out the cooked mixture (use ice cream scoop or a tablespoon the same size as the scoop) and roll into grated coconut.

Sinampalukang Baka Ingredients:

* ½ kilo beef (cut into chunk cubes)
* 2 heads of garlic (crushed)
* 1 onion (diced)
* 5 pieces taro root (quartered)
* 1 piece radish (sliced bias)
* 1 bundle string beans (cut into 1′)
* ¼ teaspoon salt
* ¼ teaspoon black pepper
* 1- cup beef stock
* 6-cups of the water used to wash rice
* ½-cup tamarind juice

Sinampalukang Baka Cooking Instruction:

1). In a bowl, marinate beef chunks in salt & pepper for an hour.

2). In a soup pot, heat oil and brown beef.

3). Add beef stock and rice wash water. Bring to a boil in low heat until beef is tender.

4). Add in taro root, radish and string beans. When vegetable is almost cooked, stir in tamarind juice.

Best serve hot. Enjoy with steamed rice.
