Calamares Filipino Style

Calamares is considered as one of the Philippines most authentic cuisine. Nowadays, it was also included as one of the famous street foods of Filipinos. It is either serve with rice or with ice cold beer for pulutan. This squid recipe is pretty easy to prepare and to cook.

The recipe below serves 5 to 6 person.

Calamares Ingredients:

* 1 kg medium sized Squid
* 2 egg yolks
* 1 cup plain (all-purpose) flour
* 1 cup oil
* Juice of 5 calamansi or lime
* Salt
* Pepper

Calamares Cooking Instructions:

1). Remove the head, ink sacs and tentacles of the squid. Peel off the outer purple skin of it. Make sure not to cut squid open while peeling.

2). Slice squid into ½ inch rings. Marinate in calamansi juice for about 15 minutes.

3). Dip squid rings in egg yolk, then dredge in flour.

4). Heat oil in a wok and fry squid rings in hot oil a few pieces at a time until they turn golden yellow, about 1 minute. Do not overcook as this will make the squid tough.

5). Remove squid rings from the wok and drain on paper towels. Season with salt and pepper.

Calamares is best serve with mayonnaise with catchup dip as an appetizer.
