Sisig as is popularly known as sizzling sisig, a Philippine dish made from parts of pig’s head, liver and usually seasoned with kalamansi and chili peppers. The dish is served almost in every Filipino restaurant.

Originally, sisig was made from chopped parts of a pig’s head — ears, snout, the brain, etc. Over the years it was reinvented into simple minced meat served on a sizzling platter with chili, liver, onion and seasoned with calamansi and vinegar.

Different orders of sisig come in pork, chicken, tuna, chorizo, bangus, and tofu. Adding raw egg on the dish while it’s sizzling hot heightens the flavor as well.

Pork Sisig Cooking Time:

Pork Sisig Ingredients:

* 1 1/2 kilo pork head
* 1/4 cup grilled liver, diced
* 2 small onions, minced
* 2 pieces red pepper, minced
* 1 head garlic, minced
* 6 pieces hot chili pepper, minced
* 2 tablespoons oil
* 1 cup vinegar
* 1 1/2 tablespoons liquid seasoning
* 1 teaspoon black pepper
* 1 teaspoon brown sugar
* 1 cup beef broth

Pork Sisig Cooking Procedure:

1). Grill pork head to remove hair.
2). Boil the pork head until it is tender enough to chop.
3). Take out all the meat and dice.
4). In a pan, heat oil and sauté garlic, onion, red pepper, pork meat and liver.
5). Pour in liquid seasoning, black pepper and brown sugar.
6). Pour in beef broth and heat until meat is tender.
7). Add in chili pepper before serving.

Tinola - Tinolang Manok Recipe

Tinolang Manok (Chicken Ginger Stew with Vegetables) recipe is a Filipino food dish that is relatively easy to cook. Also known as tinola, tinolang manok chicken soup is light and refreshing. A simple broth with chicken, spinach and green papaya, it is a favorite home-style dish in the Philippines.

Tinola Manok Ingredients:

*1 kilo whole chicken, cut into pieces.
*1 small young papaya or sayote, cut into small pieces.
*2 tablespoons ginger, crushed and slliced into strips
*1/2 cup dahon ng sili (chili leaves) or mallunggay leaves
*1 liter of water
*5 garlic cloves, minced
*1 red onion, diced
*4 tablespoons oil
*2 tablespoons patis (fish sauce)

Tinolang Manok Cooking Instructions - Procedure:

1). In a stock pot, heat oil and sauté garlic, onion and ginger.

2). Add water and the chicken.
3). Bring to a boil and simmer for about 20 minutes or until chicken is almost done.
4). Season with patis (fish sauce)
5). Add papaya and continue to simmer for an additional 5 minutes or until papaya softens but not overcooked.
6). Add sili leaves then turn off the heat.

Enjoy your Tinolang manok served with plain hot rice.


Empanada Recipe - Filipino Chicken Empanada

Emapandas in the Philippines usually contains ground beef or chicken meat in a sweetish wheat flour dough. Filipinos prefer empanadas that are closer to the Hispanic versions. There are doughy baked versions.

Here is the Filipino Chicken Empanada Recipe

Chicken Empanada

Chicken Empanada Ingredients:

Empanada Crust

* 300 g (2 1/2 cups) flour, plus extra for dusting
* 3 tablespoons sugar
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 65 g (1/3 cup) chilled solid vegetable shortening
* 125 g(1/2 cup) butter
* 6-7 tablespoons iced water
* 1 egg, lightly beaten
* 1 tablespoon water

Chicken Empanada Filling

* 1 tablespoon oil
* 1 tablespoon butter
* 1/2 medium onion, minced
* 3-4 cloves garlic, minced
* 450 g (1 lb) chicken breast or thigh meat, deboned and cubed
* 1 small potato, diced
* 1 small carrot, diced
* 250 ml (1 cup) water or chicken broth
* 100 g (1 cup) green peas (thawed, if frozen)
* 100 g (1/2 cup) raisins (optional)
* 2 teaspoons salt
* 1/2 teaspoon pepper

Chicken Empanada Cooking Baking Instructions:

1). To make the Crust, mix the flour, sugar, baking powder and salt in a bowl.

2). Cut in the butter and shortening with a knife or pastry blender until mixture resembles coarse breadcrumbs. Stir in the iced water, a little at a time while gathering the mixture to form a soft dough.

3). Form the dough into a ball. Sprinkle some flour onto a sheet of waxed paper and wrap dough in the waxed paper. Chill 30 minutes in the refrigerator.

4). To make the Filling, heat the oil and butter in a skillet. Add onions and saute about 1 minute, then add garlic and saute a further 1 minute. Add the cubed chicken meat and stir-fry until the chicken browns.

5). Add potatoes and carrots and cook 2-3 minutes. Stir in water or broth and simmer until potatoes and carrots are tender and chicken is fully cooked.

6). Add peas and raisins and simmer a further 2–3 minutes. Season with salt and pepper. With a slotted spoon, drain ingredients and transfer to a bowl, letting excess liquid drip. Set aside for 30 minutes to cool.

7). Preheat oven to 200° C (400° F). Remove chilled dough from refrigerator. Lightly flour a pastry board or clean table top. Using a rolling pin, roll out dough on a pastry board until it is 3 mm (1/8 in) thick. Don’t roll it too thin or it will break when baked. Cut 10 cm (4 in) circles using a cutter and a small bowl.

8). Spoon about 1-2 teaspoons Filling into the middle of each pastry circle. Fold the circle so the edges meet and filling is sealed. Press the edges of the pastry with the tines of a fork.

9). Combine lightly beaten egg with 1 tablespoon of water. Brush surface of each folded puff with egg mixture. Arrange on a greased baking sheet. With a knife make 2-3 slits on the surface of each puff to allow steam to escape while baking.

10). Preheat baked puffs in oven for about 20 minutes or until lightly browned. Set aside for a few minutes to cool before serving.


Maja Blanca - Maja Blanca Recipe

Maja Blanca Recipe is a Filipino authentic dessert or delicacy. Maja Blanca is made from coconut milk and corn starch. The most popular form of this is the Maja Blanca Mais.

Maja Blanca Finished Dish

Maja Blanca Recipe Ingredients:

* 1/2 c. thick coconut milk
* 1 c. rice flour
* 1 c. sugar
* 1/2 c. cornstarch
* 3 tbsp sweet corn kernel
* 4 c. fresh coconut milk or water
* 1/2 c. grated frozen buko (optional)

Maja Blanca Cooking Instructions:

1). Boil thick coconut milk in a saucepan until the oil is extracted and the precipitate forms into a dark brown color. This is called latik. Drain the latik from the oil and set aside.
2). Grease a 13-inch rectangular dish with coconut oil. Set aside. In a medium saucepan, blend rice flour, sugar,sweet corn kernels, cornstarch, and fresh coconut milk. Stir in grated buko (if used).
3). Boil over slow heat, stirring constantly to prevent lumps, until mixture is clear for about 3-5 minutes.
4). Pour hot mixture into prepared dish and allow to set. Sprinkle latik on top. Cool before slicing.
5). When rice flour is not available, soak 2 cups rice in 2 cups water overnight. Put through blender and process until smooth.
