Bicol Express Ingredients:

*1/4 kilo pork, thinly sliced
*1 cup Baguio beans
*3 cups long chili or jalapeno peppers
*1 onion, minced
*1 head of garlic, minced
*1 cup coconut milk
*1 cup coconut cream
*2 tablespoons of cooking oil

Bicol Express Cooking Instructions/Procedure:

1) In a bowl of water with salt, soak chili peppers for 30 minutes then rinse and strain.
2) In a cooking pan, heat cooking oil and brown sliced pork for a few minutes.
3) In another pan, sauté minced garlic and onion.
4) Add to the sauté the browned pork.
5) Then add the coconut milk, bring to a boil and simmer for 10 minutes.
6) Add the chili peppers, Baguio beans and cook until dish gets a little dry.
7) Add the coconut cream and simmer until the sauce thickens.

Enjoy your hot and sizzling Bicol express with rice and a lots of cooling water (in case your tongue caught on fire due to chillies).


Pancit Palabok - Pancit Recipe

This is my second recipe post of the Pancit recipe. The first one is Pancit Bihon, and in this post, it will be the Pansit Palabok.

Pancit Palabok uses a round rice noodle (often specifically labeled for pancit luglug or palabok) smothered with a thick, golden shrimp sauce or other flavored sauce, and topped with:

* Shrimp, (the size and shell-on or shell-off depending on preference)
* Crushed or ground pork rind (chicharron) for toppings
* Hard-boiled egg (sliced into disc or quartered lengthwise or chopped)
* Tinapa flakes (smoked fish)
* Freshly minced green onion

Pancit Palabok
Pansit Palabok Recipe Ingredients

Pancit Palabok Noodles / Sauce Ingredients

*1/2 kilo miki noodles
*1/2 kilo small crabs
*5 cloves of garlic, minced
*1 onion, chopped
*2 tablespoons of atchuete seeds or oil
*2 tablespoons of patis (fish sauce)
*4 tablespoons of cornstarch, dissolved in water
*1 teaspoon of monosodium glutamate (MSG)
*1 1/2 cups of water

Pancit Palabok Toppings

*Tinapa flakes (smoked fish)
*Cooked shrimps, shelled
*Squid adobo, sliced into rings
*Pork chicharon, grounded
*Spring onions, chopped
*Hard boiled eggs, shelled, sliced
*Fried garlic, minced
*Fresh calamansi (lemon), sliced

Pansit Palabok Cooking Procedure:

1). Extract fat and meat from clean crabs, set aside.
2). Pound crab and extract juice on 1 1/2 cups of water
3). On a pan, sauté garlic and onions until golden brown then add crab fat, crab meat, 1 1/2 cups of crab wash, patis and MSG. Bring to a boil and simmer for 10 minutes.
4). Add corn starch and continue to simmer while constantly stirring until thick.
5). Put miki noodles in a strainer and dip in boiling water for 5 minutes or until cooked.
6). Lay drained noodles on a platter and pour the palabok sauce. Garnish with toppings and serve.


Sinigang Na Bangus - Fish Sinigang Recipe

This is another version of my first sinigang recipe posts. This is the Sinigang na isda or fish sinigang recipe.

Milkfish or bangus is the fish most commonly used in cooking fish sinigang. Thus, this recipe is called the sinigang na bangus or milkfish sinigang recipe.

Sinigang Na Bangus - Fish Sinigang Recipe
Sinigang na Bangus Ingredients:

* 1 piece large bangus, cleaned and sliced into serving pieces
* 5 cups water
* 1 small ginger, sliced
* 2 pieces tomatoes, quartered
* 1 medium onion, sliced
* 2 medium eggplants, cut into serving pieces
* 5 pieces string beans, cut into serving pieces
* 2 cups kangkong leaves
* 1 small pack tamarind powder
* 1 teaspoon salt

Sinigang na Bangus Cooking Procedure

1. In a casserole, bring water to a boil together with the ginger.
2. Add the bangus, tomatoes, and onion and simmer for 10 minutes.
3. Add the tamarind powder and salt to taste.
4. Add the eggplant and string beans and simmer for another 5 minutes.
5. Remove from heat, add the kangkong leaves, and let stand covered for 5 minutes.

You may also add or use fish sauce or patis to taste. Serve hot with rice. Enjoy eating.


Sinigang na Baka - Sinigang Recipe

This is the third issue of this blog's Sinigang recipe. You may check my previous sinigang recipes called Sinigang Na Hipon and Sinigang Na Baboy.

This third sinigang recipe is a combination of beef and vegetable. This is what we called the Sinigang Na Baka or Beef Sinigang Recipe.

Sinigang na Baka - Sinigang Recipe

Sinigang Na Baka Ingredients:

1 kilo beef, cubes (for stewing)
12 pieces tamarind (sampaloc)
1 big onion, diced
6 big tomatoes, quartered
2 pieces radish, sliced
4 pieces gabi, peeled & cubed
1 bundle sitaw (stringbeans) (cut into 2″ long)
1 bundle kangkong (cut into 2″ long)
salt and patis (fish sauce) to taste

Sinigang Na Baka Cooking Procedure:

* Place the tamarind in a small pot then bring to a boil or until the tamarind is soften. Pound and strain the juices then set aside.

* In a casserole, bring beef to a boil, place in a lower heat then simmer for an hour or until the beef is tender.Take out all scum that rises to the surface.

* Add onions, tomatoes and tamarind juice.

* Add gabi then simmer for a few minutes.

* Add string beans (sitaw) and kangkong stalks.

* Add kangkong leaves then serve.

Note: You may season it with salt or fish sauce (patis) to taste. Sinigang na baka is ready to be serve.!

Macaroni Salad Recipe

First of all, Macaroni salad is a type of salad consisting primarily of macaroni pasta, that has been cooked and tossed together with mayonnaise. Macaroni Salad recipe primarily consist of elbow macaroni, mayonnaise, mustard, onions, celery, and salt and pepper to taste, mixed together and served cold.

Chicken Macaroni Salad
In this post, I will be discussing the Chicken Macaroni Salad Recipe.

Here are the basic Chicken Macaroni Salad Ingredients:

1/5 kilo macaroni noodles
2 to 3 pieces, medium sized carrots
1 big chicken breast
500 ml of mayonnaise
1 can (836 g) pineapple chunks or tidbits
1 big white onion, finely chopped
1/2 cup sweet pickle relish
3 hardboiled eggs, diced
1 cup diced cheddar cheese
1/2 cup raisins
salt and pepper to taste

Chicken Macaroni Salad Cooking Instructions:

Cook macaroni noodles according to package cooking instructions.
In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
Drain carrots and let cool. Peal skin then dice.
Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths
Drain pineapple chunks or tidbits.
Combine all ingredients while adding salt and pepper, to taste.

Chicken Macaroni Salad is best serve after refrigeration. Enjoy.


Sinigang na Hipon - Sinigang Recipe

This is a continuation post for my Sinigang recipe. At the first posted Sinigang recipe, I gave the basic ingredients and steps in cooking the Sinigang Na Baboy recipe.

Today, I will be discussing the Sinigang na Hipon Recipe or the Shrimp in Sour Soup

Sinigang na Hipon - Sinigang Recipe
As we all know, Sinigang is a Philippine dish famous for the variety of ingredients. Sinigang’s characteristic taste is attributed to the ingredient that gives its sour taste and most commonly use ingredient is Tamarind or Sampalok for its sour taste.

Here is the basic ingredients and procedure of Sinigang na Hipon.

Sinigang na Hipon Ingredients:

# 1 Kilo Shrimp
# 12 pcs Tamarind (Sampaloc) or 1 pack Sinigang Mix
# 1 big Onion (diced)
# 3 big tomatoes (quartered)
# 2 pieces Radish (sliced)
# 1 bundle Sitaw (Strringbeans)
# 1 bundle Kangkong (cut into 2″ long)
# 3 pieces long green pepper
# 5 cups ricewash or water
# Salt or Patis (fish sauce)

Sinigang na Hipon Cooking Instructions:

* Boil Tamarind in rice wash or water to soften.
* Pound and extract all juices and set aside.
* In a casserole, boil rice wash or water, Tamarind juice, onions, tomatoes and Radish.
* Lower fire, add in Shrimps, Kangkong, Sitaw and green long pepper.
* simmer for 5 minutes.

Enjoy now your hot sinigang na hipon. You may use fish sauce (patis) or salt for additional taste.


Sinigang - Sinigang Recipe

Sinigang is a one of the most popular dish in the country. Sinigang recipe characteristic flavor comes from tamarind which gives it a sour taste and overwhelms the taste of its meat.

Sinigang - Sinigang Na Baboy Recipe
Sinigang ; whether its sinigang na baboy (pork sinigang), sinigang na hipon (shrimp sinigang), sinigang na bangus (milkfish sinigang), sinigang na baka (beef sinigang), sinigang na isda (fish sinigang) or sinigang sa miso, the dish is stewed with tamarind, green pepper, tomato, and onion.

In this post, hopefully, you will learn the basic steps on how to cook sinigang.

Here is the basic and most common Sinigang Recipe.

Pork Sinigang Recipe Ingredients:

3/4 kilo Pork, cut into chunks
3 tomatoes, sliced
2 onions, diced
5 cloves of garlic, minced
100 grams Kangkong (river spinach)
100 grams String beans
2 pieces horse radishes, sliced
3 pieces gabi (taro), pealed
2 pieces sili pag sigang (green finger pepper)
200 grams sampalok (tamarind)
3 tablespoons of patis (fish sauce)
1 liter of rice wash or water

Pork Sinigang Cooking Instructions:

* Boil sampalok in water until the shell shows cracks. Let cool then peal off the shells and with a strainer, pour samplalok (including water) into a bowl. Gently massage the sampalok meat off the seeds, strain again.

* In a pot, sauté garlic and onion then add the tomatoes. Let simmer for 5 minutes.

* Add pork and fish sauce then add the rice wash. Bring to a boil then simmer for 15 minutes then add the gabi. Continue to simmer for another 15 minutes or until the pork is tender.

* Add the horse radish and simmer for 10 minutes then add the string beans, kangkong and sili (for spice-optional). Let boil for 2 minutes.


Pork Sinigang Cooking Tip:

Instead of sampalok fruit (tamarind), you can substitute it with any commercial souring seasoning like sampalok seasoning or tamarind bouillon cubes for this pork sinigang recipe.


Japanese Mochi - The Japanese Mochi Recipe

I know, this is not a Filipino recipe or dish, but, this Japanese recipe do have a similarity with some of our delicacies.

Japanese Mochi is a sweet, short-grained, very glutinous rice with a high starch content. Mochi is commonly used to make rice cakes, for which it is pounded in large tubs until it becomes extremely sticky.

Broiled Mochi with Nori Seaweed Ingredients:

* 8 frozen mochi squares
* 1/2 cup soy sauce
* 1 sheet nori (dry seaweed)

Broiled Mochi with Nori Seaweed Cooking Directions:

1) Preheat oven to 450 degrees F (275 degrees C).
2) Dip mochi into soy sauce, then place on a baking sheet. Let bake for about 5 minutes, or until heated through.
3) While mochi is cooking, cut the dried seaweed into 8 strips. Place these strips in a large frying pan over medium heat. When they are warmed, after approximately 1 to 2 minutes, remove them from the heat.
4) Wrap each mochi cake in seaweed; serve warm.


Pansit Recipe Pancit Bihon

This recipe is one of the many Pancit recipes of the Filipinos. The Pancit Bihon or Bijon is a very thin rice noodles fried with soy sauce and some citrus (kalamansi) and possibly with patis (fish sauce), and some variation of sliced meat and chopped vegetables. Below is the very basic and easy to follow Pancit recipe pancit bihon ingredients and cooking procedure.

Pancit Recipe Pancit Bihon Ingredients:

*1 8 oz. pack pancit bihon noodles
*1 cooked chicken breast, shredded
*2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups of water
*1/4 cabbage, sliced into strips
*1 onion, pealed and sliced
*3 cloves of garlic, crushed and minced
*1/3 cup scallions, cut into pieces
*1 carrot, sliced into strips
*2 tablespoons of cooking oil
*3/4 cup diced celery
*3 tablespoons soy sauce
*Salt and pepper to taste
*5 pieces of calamansi or 1 lemon, sliced

Pancit Recipe Pancit Bihon Cooking Instructions:
  1. Soak the pancit bihon noodles to soften for 10 minutes
  2. Grease a large pan or wok with oil. Sauté garlic and onions.
  3. Add the chicken broth, the shredded chicken breast and all the vegetables until cooked.
  4. Mix in the pancit bihon noodles and add the soy sauce, cook for about 5 minutes or until the noodles are soft.
  5. Salt and pepper to taste.
Pancit Recipe Pancit Bihon Cooking Notes:

  • 1/2 kilo of pork sliced into slightly thin strips
  • 1/2 cup vinegar
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tbsp hot sauce
  • 1 can calamansi soda (Sprite softdrinks would do as a substitute)
  • 1 head of garlic crushed
  • 1 small onion minced
  • salt to taste
  • 1 tbsp cooking oil
  • 1 tbsp sesame oil
  • skewers

Filipino BBQ Recipe Philippines Barbecue Cooking Procedure
  • Combine the liquid ingredients, sugar, onions and garlic and touch of salt to make your marinade.
  • Add in the strips of pork. Let this marinade for a minimum of 1 hour, preferably overnight in the fridge.
  • Make sure you soaked your skewers to prevent them from burning when on the grill. Skewer the meat. Set aside to let the excess marinade to drip.
  • Boil the marinade until it's reduced to half. Transfer into a bowl and mix the oil. This would be a good glaze as we grill the bbq. Sesame oil makes the bbq aromatic as we grill.
  • Grill the skewered meat over charcoal for a few minutes. Probably would take about 5 minutes on each side. Brush both sides with the glaze to give it some shine and color.

Homemade Chocolate Chip Cookie Recipe Ingredients:

1 cup butter, softened
1/2 cup sugar
1 cup dark brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips

Homemade Chocolate Chip Cookie Recipe Baking/Cooking Directions:

Cream butter and sugars. Add eggs, and continue to beat until light and fluffy. Add vanilla.
Mix flour, baking soda and salt together. Gradually add to creamed mixture and stir until combined. Stir in chocolate chips.

Drop by spoonfuls onto ungreased cookie sheet. Bake at 300 degrees F. for 18 to 24 minutes.

Siopao Recipe Siopao Making

Siopao is a steamed bun with variety of fillings. It could be either Siopao Asado or Siopao bola-bola. Siopao fillings can also be some sort of pork, chicken, beef, shrimp, eggs, and possibly chopped scallions and water chestnuts as well.

Here is the basic Siopao Recipe that you can prepare at your home.

Siopao Recipe Ingredients For Siopao with chicken filling:

Siopao Dough:

* 4 tbs sugar
* 1/2 cup warm milk
* 1/3 cup warm water
* 2 tsp active dry yeast
* about 2 1/2 cups flour
* 1/2 tsp salt

Siopao Chicken Filling:

* 2 cups shredded cooked chicken
* 2 tbs vegetable oil
* 1/2 cup minced green onions
* 2 tsp minced garlic
* 1/2 cup water
* 4 tsp hoisin sauce
* 4 tsp oyster sauce
* 1 tbs sugar
* 2 tsp cornstarch dissolved in 2 tbs water
* 1 egg yolk, lightly beaten

Siopao Baking/Cooking/Preparing Directions:

1. Dissolve 2 tbs sugar in milk and water. Sprinkle the yeast and let stand in warm place until bubbly, about 10 minutes.
2. Gradually add remaining sugar, 2 cups flour and salt. Add more flour as needed until dough is no longer sticky.
3. Place dough on a lightly floured work space and knead until smooth and elastic (about 6 – 8 minutes). Place in an oiled bowl, cover and let rise until doubled in bulk (about 1 hour).
4. Prepare filling. Heat oil in wok or pan. Add green onions and garlic, frying for 1 minute. Stir in water, hoisin sauce, oyster sauce and sugar. Add cornstarch solution, boil, stirring until thick. Add chicken. Cool.
5. Prepare dough. Punch down dough then roll into a cylinder. Cut into 12 equal pieces, rolling each piece into a ball. Cover.
6. Flatten each ball and roll into a circle about 4 – 6 inches in diameter. Place 1 heaping tbs of filling in the center. Gather edges of circle over the filling; twist and pinch edges together to seal.
7. Place buns seam side down 2 inches apart in a baking sheet. Cover and let rise in a warm place until puffy and light. Brush tops with egg yolk.
8. Preheat oven to 350F. Bake buns until golden brown.
